High in the hills of Chalchuapa, Santa Ana, the Pacas family tends to one of El Salvador’s most thoughtfully managed coffee farms. Their Finca La Esperanza (“Hope Farm”) stretches from 1,100 to 1,800 meters above sea level, where Orange Bourbon variety trees thrive in the cool mountain air.

This natural process coffee captures everything we love about the Pacas family’s approach to quality. After careful picking, the coffee cherries dry slowly in the sun for 25-30 days at the family’s Vivagua mill, developing an elegant sweetness that reminds us of cherry cola. This pronounced fruit character melts into notes of creamy almond butter and fresh dates – a profile that showcases both the farm’s exceptional terroir and the family’s mastery of natural processing.

Since taking over La Esperanza in 2010, the Pacas family has transformed this historic farm through a careful renovation program, replacing aging trees with vibrant new stock. Their commitment to improvement shows in every cup, as does their deep understanding of how different coffee varieties express themselves at various altitudes across their land.
